world food day:

yesterday was world food day. I suggest making enemy pie (such a great children's book!!)

or 

enemy clementine pumpkin squares

add some chopped chocolate for extra enemy love
loosely adapted from this eating well recipe


  • 1 c whole-wheat flour
  • 1 t baking powder
  • 1/2 t baking soda
  • 1/4 t salt
  • 1/2 t ground cinnamon
  • 1/4 t freshly ground nutmeg

3 clementines, whole and washed well
1 egg
1 T coconut oil, melted
  • 1/3 c canned unseasoned pumpkin puree
  • 1 T honey
  • 1/4 cup chopped raisins or pitted dates
  • 1 T chopped walnuts or pecans (optional)
  • 3 T finely chopped dark chocolate (optional, will help world peace



  • Preheat oven to 400°F, spray an 8x8 baking dish with olive oil spray
  • Whisk whole-wheat flour, baking powder, baking soda, salt and cinnamon in a large bowl
  • Puree whole clementines in blender. Mix with egg, pumpkin, honey and coconut oil. 
  • Make a well in the center of the dry ingredients; add the wet ingredients, raisins, and chocolate if using, and mix until just combined. 
  • Scoop the batter into the prepared pan and top with nuts, if using (oats would be great here too)
  • Bake the muffins until the tops spring back when touched lightly, about 15 minutes
Enjoy with yogurt and an extra drizzle of honey
