yogurt dressing and perfect eggs

I was starving and kind of hacked the egg up...

I have been exploring different eating paths for a few months.  I think the key to eating well is listening to your own body; everybody has different needs which fluctuate day to day. This of course is easier said than done, but I guess what I have learned is don't get too caught up in a specific plan where eating something like a piece of bread could send you into a downward spiral.  Sometimes I need meat, sometimes I need more fat or salt or carbs, etc. than I did the day before and that is ok.

On this particular day, I was craving eggs and avocado (healthy fats and protein, yum!).  

I love hard-boiled eggs where the yolk is just firm.  The method that always works for me:

place cold eggs in cold water
bring to a boil
cover
turn off the heat and let them hang out for 12 minutes
rinse under cold water and eat or save in fridge

In the meantime, I chopped veggies I had on hand:
spinach, red bell pepper, grape tomatoes, cucumber, carrots and avocado

Toss with simple yogurt dressing:
2 T plain yogurt, drizzle of olive oil, juice of half a lemon, salt, and pepper

top with an egg or two, fresh herbs (I had cilantro but dill would be perfect), and maybe some verde sauce...soo good.

running and a cowboy at the lake



I ran the lake yesterday and did not take my own advice; I was fighting it with almost every stride. It was a hard run, got a little easier around mile 3, and I tried to relax but I still had trouble letting it go.  I made it though (!) and I feel great today.  So much that I learn from running can be applied to life.  At the end, I saw this cowboy; so pretty, definitely made me want to go horseback riding.

scary uncomfortable awesomeness

for the past month or so, I have vowed to do something scary every day, something a little (or a lot) outside of my creature comforts.  doing the scary feels great, I highly suggest making a promise to yourself too, you never know where the uncomfortable will take you.

sweet and salty

Here are two of my favorite healthy subs for sweet and salty cravings:

cold and sweet craving:
frozen banana: freeze ripe, peeled bananas (great way to use the over-ripe stragglers) in foil and eat like a popsicle.  so delicious.

crunchy salty craving:
Kale chips: pre-heat oven to 350, wash and tear kale leaves, spray with olive oil, sprinkle with salt (other options lime, sesame seeds, red pepper flakes, soy sauce) and bake for about 10 minutes, tossing half way through.  Watch carefully as they go from perfect to burnt pretty quickly.  So good and crunchy!!
