easy fish tacos

I love good fish tacos; these took about 10 minutes to make

Simple Fish Tacos

1lb firm white fish (I like cod, but get what looks good)
olive oil
small corn tortillas

topping ideas:
shredded lettuce, cabbage, or jicama
finely diced white onion
lime wedges

Saute fish in about 2 teaspoons of olive oil until firm, about 3 minutes on each side.  Season with salt and pepper.

While fish sautes, chop toppings.  I think onion, cilantro, and lime wedges are perfect and something crunchy like lettuce or cabbage is nice also.   I added mango, too.

Warm tortillas and fill tacos.  These made about 8 tacos for me. Serve immediately and top with salsa.  Yum.
