first fall breakfast
best banana pancakes
1 banana
1 egg, beaten
1T almond milk (or till consistency you prefer)
3T flaxseed meal
1T wheat germ
1t. baking powder
smash banana, add egg and almond milk. mix rest of ingredients and add to mixture. meanwhile get skillet super hot, coat pan with a bit of butter. scoop batter and let sit till golden brown, about 2 minutes, then flip. enjoy with cinnamon, toasted walnuts, sliced apples and greek yogurt.
recipe can easily be doubled, I got about 6 small pancakes.
let's start the fall with this positivity challenge!

lots of good local food happenings
thursday sustainability fair at bu (I learned that taza chocolate is made right in somerville)
on friday another famers' market, my favorite at copley
and a fun local dinner at hearty meals for all
saturday was a picnic with lovely MSDA ladies
sunday whole foods 5k, perfect weather, I'm inspired to run a 10k next...

dark and stormy/ savory breakfast

I don't always want something savory in the morning (usually fruit yogurt morning person)
but when I do:
savory breakfast (of champions)
champion side:
brocoli/baby greens
microwave for 2 min, add small dollop of pesto (or topping of choice, parm? soy sauce? yummm)
champion wrap:
2 scrambled eggs
I recently have been craving my eggs the quick scramble method, kind of like stir frying
works best with only 1 or 2 eggs and a kind of large pan
get your pan super hot first (I let mine sit for a minute on medium which works perfectly)
spray with olive oil
crack eggs directly in pan and scramble super fast
let sit in pan to finish cooking
meanwhile spread 1/2 ezekiel wrap with favorite spread (mustard? hummus?)
than one last turn in pan for eggs
remove from heat spread over wrap
add additional toppings if desired, roll and enjoy!!

good books and newness
fall has arrived in Boston and the crisp air has been bringing me to a place that I haven't felt in years
I started my MS/DPD/DI program last week; I am still finishing up my pre-reqs but it is so awesome to also be in my program and (finally) finding my place. I have two awesome book recommendations:
I also just finished Norwegian Wood by one of my absolute favorites, Haruki Murakami. Really good, but you should definitely start with his book Wind Up Bird Chronicles, so so good.

rainy day
bran muffin tops (inspired by bob's red mill bran flax muffin recipe)
1/2 c. whole wheat flour
1/2 c. flaxseed meal
1/2 c. oat bran
1 t. baking soda
1/2 t. baking powder
1/2 t. salt
2 t. cinnamon
1 large carrot, shredded
1 large apple, peeled and shredded
1/2 c. raisins
1/2 c. walnuts
4 T. blackstrap molasses
1/4 c. milk
1 egg, beaten
1 t. vanilla
whisk dry ingredients (flour through cinnamon). add carrot, apple, raisins and walnuts to dry ingredients. mix milk, egg, and vanilla. add wet to dry and mix until just combined.
scoop 1/4 cup onto cookie sheet and bake about 12 minutes or until dry on edges and golden. (I got about 8 muffins, I put the extra in mini ramekins.)
best warm with a bit of yogurt and or ricotta spread on top.
