holiday baking

triple almond butter cookies

3/4 c whole wheat pastry flour
1/4 t salt
1/2 t baking soda
1/8 t freshly grated nutmeg
1/8 t cinnamon
2 T unsalted butter, softened
1/3 c brown sugar
1 egg
1/2 c almond butter
1/2 t vanilla extract
1/4 c. roasted almonds, roughly chopped
1 dark chocolate bar with almonds, chopped
coarse salt to sprinkle on top

mix dry ingredients. cream butter and sugar. beat in egg. mix in almond butter and vanilla. add dry to wet, just until incorporated, mix in almonds and chocolate. set in fridge for at least an hour or up to 2 days. preheat oven to 350, scoop, criss cross with fork if desired and sprinkle with coarse salt. bake until just set, about 7 minutes.


banana protein pancake, cranberry orange relish

cranberry orange relish
bring fresh cranberries, a scant cup of water and a sprinkle of brown sugar to a boil. reduce heat and let simmer, about 15 minutes until cranberries are bursting and thickened. add juice and zest of 1 orange and continue to simmer for 10 minutes. allow to cool and sauce will continue to thicken.

so good stirred into plain yogurt.
